Rock cakes by Ane

Rock cakes


Ingredients:

· 240 grammes of flour
· 2 teaspoons of backing powder
· 1 teaspoon of mixed spice
· 120 grammes of butter
· 120 grammes of sugar
· 180 grammes of raisins
· Candied peel
· 4-5 tablespoons of orange juice


Method:

1- First, grease a backing tray. Preheat the oven to 210ºC

2- Next mix the flour, the baking powder and the mixed spice.

3- Later, add the sugar, the raisins, the candied peel and the orange juice.

4- Then, shape the mixture in to small heaps. Put them on the baking tray.Sprinkle them with sugar.

5- Finally, bake for 12 minutes. Serve after 30 minutes.
